Ingredients

  • For the Whole Wheat Pastry
  • 2 cups whole wheat flour

  • 1/3 cup cold olive oil or plant-based butter

  • 1/2 tsp salt

  • 4–6 tbsp cold water

  • For the Filling
  • 1/2 lb lean ground beef or ground turkey

  • 1 small sweet potato, peeled and diced

  • 1/2 small rutabaga (swede), peeled and diced

  • 1/2 small onion, finely chopped

  • 1/2 cup chopped cauliflower (optional, but great for added fiber!)

  • 1 tsp fresh thyme (or 1/2 tsp dried)

  • Salt & pepper to taste

  • Plant milk or 1 beaten egg, for brushing

Directions

  • Make the dough
In a large bowl, mix the flour and salt. Add olive oil or plant butter and use your hands or a fork to mix until crumbly. Gradually add cold water, one tablespoon at a time, until dough comes together. Wrap and chill for at least 30 minutes.
  • Prep the filling
While the dough chills, toss together your ground meat, chopped veggies, herbs, and seasoning in a large bowl. No need to pre-cook—this bakes all in one.
  • Assemble the pasties
Preheat your oven to 375°F (190°C). Divide the dough into 4 equal pieces and roll into 6–7 inch circles. Spoon filling onto one side of each round, fold over, and crimp the edges to seal (traditional Cornish style!).
Brush with plant milk or egg for that golden finish.
  • Bake
Place on a parchment-lined baking sheet and bake for 35–40 minutes, or until golden brown and crisp on the outside.

Notes

  • Why It Works: This recipe keeps the heart of the original Cornish pasty—savory, tender filling wrapped in a golden crust—but reimagines it with better-for-you ingredients. By using whole wheat flour, sweet potato, and lean protein, it supports steady energy without the blood sugar rollercoaster. The balance of fiber, protein, and healthy fats makes it satisfying and nourishing, so you can feel good about every bite.
  • Make Ahead Tip: Let cool completely, then freeze in an airtight container for up to 2 months. To reheat, pop in the oven at 350°F for 15–20 minutes.
